Sagebrush Cantina Announces New Chef & Menu Selections

Sagebrush Cantina announces that chef Salvador Morales is the restaurant's new head chef. Morales specializes in traditional and gourmet Mexican cuisine and will be adding new dishes to the cantina's award-winning menu. His culinary background includes the kitchens of Rosa Mexicana in the Staples Center, El Santo Coyote in the Melrose district, and El Toro Cantina in mid-Wilshire where he created a menu with 40 different tacos, some which will be added to the cantina's menu.

Morales has an established reputation for his open-flame grilled meats and marinades, fresh and varied salsas, and creating new flavor sensations by introducing traditional sauces and ingredients on different foods. "I have been cooking since I was 14," says the self-taught chef. "My mother owned a popular restaurant in Oaxaca, Mexico, and my uncle was a chef so I was always imaging and experimenting with different flavors and foods in their professional kitchens." His signature dishes are succulent, marinated Carne Asada, gourmet Surf and Turf with pounded filet mignon and lobster enchiladas, Whole Baked Fish, and Ceviche. He also has two signature desserts, fresh churros accompanied by three sauce creations of chocolate, Mexican caramel and lime cream and a chocolate Tres Leches Cake.

Morales culinary style will enhance the Sagebrush Cantina menu with a variety of open-flame grilled and roasted meats along with traditional Mexican dishes using authentic cheeses, creams, and freshly made salsas. New to the menu are a variety of vegetarian selections with specialty dishes featuring cactus. Specials will be created from local farmers' markets to accompany the regular menu items which will all be made with fresh ingredients and produce. The cantina menu will continue to offer many of its own signature dishes such as fajitas, Tijuana egg rolls, Chicken Miguel and bread pudding. "I will be creating the cantina's popular dishes with fresh ingredients and attention to presentation," says Morales. Brunch diners can also look forward to an enhanced presentation of their favorite buffet items as well as an extensive omelet selection and gourmet huevos rancheros. "I love brunch," said Morales.

The award winning Sagebrush Cantina received the Best of City Search Los Angeles Brunch and Outdoor Dining award and the Conejo Valley Best of the West Hors d'oeuvres and Blended Margaritas recognition.
